In a 3 movement symphony or sonata, the 2nd is usually what you're looking for (an adagio, meaning slow). So, maybe check out some of Beethoven's piano sonatas (32 of them). All of them have a slow(er) movement. Mozart also has a ton of piano concertos (piano + orchestra).

I know there are CD's full of slow relaxing music. Try searching for Classical Music Top Adagio's or Most relaxing Adagio's or something along those lines.
