Default How do you scan and edit "stuff"?

This is probably a newbie question but im kinda wondering if there is a way to scan a document or any sort of paper and edit the words on it.
Like, if i scan a reciept can i change the numbers and letters on microsoft word or somthing like that?
Can someone tell me how.

Depends on your scanner and software. Some can, some can't.

I have a pretty good all in one printer, its HP officejet 7130.
Would this work? And what programs are good to edit?

Yea, it does let me edit a little bit but finding same fonts and size is kinda hard. Thanks man.
